We have some very exciting Disney Cruise Line news to share with you from Disney Parks Blog. Chef Arnaud Lallement, advising chef to our French-inspired restaurant Remy, was recently awarded a prestigious three Michelin stars for his family-run restaurant L’Assiette Champenoise, near Reims in the Champagne region of France.
Chef Lallement was the only new addition to the highest ranking in this year’s France Michelin Guide, the world’s most esteemed food guide and restaurant-reviewing institution. The guide’s 2014 France edition lists only 27 restaurants with three stars.
Those of you who have sailed on the Disney Dream and Disney Fantasy have hopefully taken advantage of your exclusive chance to taste Chef Lallement’s world-class cuisine at Remy. Chef Lallement creates and implements menus for Remy, Disney Cruise Line’s first ever premier dining option, alongside Victoria & Albert’s Chef Scott Hunnel.
Twice a year, Lallement personally sets sail and steps into the Remy kitchen to develop new menu items and work with the onboard culinary team. Some of his signature dishes include Maine lobster with paprika curry, salmon with coriander jus and sea bass with herbs crème and sweet vermouth. For dessert, he’s created sweet selections like the choux pastry with praline cream and a green apple tarte tatin with salty caramel sauce.
For those of you who haven’t had the chance to dine at Remy yet, reserved exclusively for adults, Remy features exquisite cuisine, impeccable service and superior, seasonal ingredients sourced from around the world. Dinner at Remy is a lavish and leisurely affair, starting with a signature chilled Taittinger Champagne cocktail made tableside, followed by eight to nine small courses.
Remy also offers an elegant brunch on sea days during four-night and longer cruises, featuring a decadent six-course French-inspired meal and a selection of Champagnes to perfectly pair with each dish.
